Chickpea Caprese Salad

  • Cooked chickpeas

  • Cherry tomatoes

  • Feta chunks (vegan)

  • Mozzarella balls (vegan

  • Fresh basil

  • Salt and pepper to taste

  • Olive oil

  • Balsamic vinegar

  1. Wash your chickpeas thoroughly so that there is no lingering bean smell, and then add to a large mixing bowl.

  2. Cut cherry tomatoes in half and add them to the bowl.

  3. Rip or cut the basil and add to the bowl.

  4. Add the feta and mozzarella, salt and pepper, olive oil, and balsamic vinegar to the bowl.

  5. Mix well and enjoy!
