Coconut Chia Seed Pudding

I have had stomach and gut issues since the fall of 2020, and it is best believed that I have tried almost every recipe out there to help. So many foods made my stomach hurt worse, or just were so unappetizing that I couldn’t stand to eat them. In my search for foods that would not only benefit my stomach but taste good, I found chia seed pudding. This exploration developed into a new way of making/enjoying chia seed pudding; the tropical freshness given by the coconut, the fruity sweetness of the berries, and the satisfying crunch of the granola, all create the perfect morning indulgence.
This recipe checks all the boxes; as a sweet treat for the taste buds, a fiber-rich superfood for the stomach, and a simple preparation fit for busy schedules. If you are struggling with stomach health, or just want to feel light as you start your day, then this recipe is for you.
I like to make this the night before I head to sleep so that in the morning I already have a delicious breakfast waiting for me. You can also just keep some pudding in the fridge for whenever you’re hungry. It is addictingly sweet while also staying on the healthy side of foods, so if you have a sweet tooth I strongly recommend you try it out.

Ingredients
2 tbs chia seeds
3 tbs coconut shreds
3/4 cup milk substitute
1-3 tbs maple syrup (preference)
1/4 cup granola of choice (opt.)
1/4 cup fruit of choice, blueberries recommended (opt.)
1. add the chia seeds, coconut shreds, milk substitute, and maple syrup to a dish that can close
2. Stir well and add to the refrigerator to leave overnight or for about 5 hours
3. Add granola and berries and any other toppings of choice
4. Enjoy!
Tips-n-tricks!
If the pudding is still milky when you take it out, add more chia seeds and let it sit for a bit longer, and the opposite if it is really thick and dry
The coconut shreds and chia seeds should look about a 1:1 ratio in the milk
