Microwave Cake Oats

Sweet maple combined with hearty oats complement each other, transforming into the perfect bowl of warm, flavorful, goodness. This elevated and delicious oatmeal imitates the baked oat cake style while only taking a couple of minutes. With endless possibilities for toppings and mix-ins, the yumminess never ends. 

This recipe had its debut in the quarantine of 2020. As many of us were, I was playing on social media and stumbled upon baked oatmeal. As a little kid, I always liked my oatmeal to be thick, and wanted a fancy topping (usually whipped cream), so as soon as I saw these elaborate recipes for baked oatmeal I had to give it a go. While the results were amazing, I spent an hour making what should be a simple recipe. Through trial and error over the years, I eventually created this basic recipe that I now use almost every day. It takes so little time and tastes like it took an hour. The aroma alone is a reason to get out of bed with its both sweet and savory components.

Oatmeal in general is a healthy food, but this recipe comes with added benefits. The addition of different toppings and select ingredients makes for a more balanced meal with protein and fruit, as well as the fiber that oats provide. There is an elevated feeling intertwined with enjoying this food because it is not just a packet of quick oats that is so full of sugar, it’s just not that healthy. With these simple benefits, you are sure to start your day off right. 

I like to enjoy this in the mornings when I am craving some oatmeal, or just when I do not know what to eat for breakfast. It is perfect for when you are feeling a bit fancier than scrambled eggs, but do not have the time for a tower of crepes.

Ingredients

  • 1/2 cup oats1 flax egg (1 tbs with 2tbs water) or 1/2 mashed banana

  • 1-2 tbs maple syrup or sweetener

  • 1 tbs of flour of choice

  • pinch of nutmeg

  • pinch of salt

  • cinnamon to taste

  • 1/8 cup water

  • 1/4 cup milk of choice

  • 1/3 cup fruit of choice (apple or berries recommended)

 
  1.  Place flax egg or mashed banana in a microwave-safe dish

  2. add oats, cinnamon, flour, nutmeg, salt, 1 tbs maple syrup

  3. pour milk and water into dish and stir

  4. place a paper towel over the dish and microwave for 2:45-3 minutes (for a more liquidy oatmeal, only microwave for around 2-2;45 min)

  5. add fruit of choice, more maple syrup, any other toppings, and enjoy!

  • Before you microwave, your oatmeal should be a pancake batter consistency, and if not they add either more water or more oats.

  • For extra protein, try adding peanut butter or some nuts!

  • To make your oatmeal Chocolatey, Substitute the cinnamon for cocoa powder and mix in some chocolate chips
