Pizza-Style Lunch Wrap

The pizza cravings were handled, in the form of a lunch wrap. This colorful, customizable, and choice meal is both light and filling.

Like many people, issues with gut health have limited my diet, taking away pizza from my palette. While I was trying to figure out how to eat without stomach pains, I would restrict my diet to a flavorless assortment of vegetables. This made my cravings roar out of control, especially for pizza. Realizing that pizza was not just a set of ingredients, but a type of food, I began exploring different ways of making pizza. That’s when I realized that a deconstructed lunch wrap, could be easily altered into a type of pizza. Finding my perfect set of ingredients, I developed this recipe.

It is delectably light on the body, while also filling you up; the combined textures and tastes of the varied ingredients complement each other in a rich palette; most of my cravings for pizza diminished (not entirely gone because who can resist pizza). The best part is that it is completely customizable; if you don’t like something, don’t use it! And if you want to add another flavor into the mix, go ahead!

 Serving Size: 1 Time: 15 minutes

Ingredients

  • 1 large tortilla

  • 1-3 tbs hummus

  • half an avocado

  • shredded cheese

  • lettuce/spinach

  • 1/3-1/3 cup diced tomato

  • salt, pepper, and chili powder to taste

  • Cholula/hot sauce

  • lime or lemon juice (optional)

  • any veggies of choice

 
  1.  take your tortilla and place it on a cutting board or flat surface

  2. mash the avocado and hummus together with the salt, pepper, paprika, and lemon/lime juice, then spread into an even layer on the tortilla

  3. sprinkle on the shredded cheese

  4. dice the tomato if not already diced, and add to the tortilla

  5. chop up the lettuce and add to the tortilla, as well as any other veggies desired, (bell pepper and carrots are good options)

  6. drizzle some hot sauce on top

  7. slice into 6 pieces, like a pizza, and enjoy!

 Tips-n-Tricks!

  • If you would like to warm up your pizza wrap, throw it in the toaster oven, or the air fryer, for a few minutes after adding the shredded cheese to get that melty effect!
