Vegetable Coconut Curry

Ingredients - Measure with your heart

  • Coconut Oil

  • Coconut Milk

  • Water

  • Mixed Vegetables of Choice

  • Shredded Coconut

  • Spices

    • Curry

    • Turmeric

    • Fresh Ginger

    • Paprika

    • Salt and Pepper

    • Chili

    • Ginger Powder

    • Sage

    • Cayenne

  1. Use a bit of coconut oil to sauté the vegetables until they are about halfway cooked

  2. Add a “first round” of all the spices (except the fresh ginger) and stir well. Use an emphasis on the curry, but all the other spices should be equal

  3. Add coconut milk and water (2:1 ratio) to the pan until the vegetables are 3/4 of the way covered. Then let simmer until the sauce starts to thicken. While this is happening, mince the fresh ginger.

  4. Add more coconut oil, fresh ginger, and more of the spices added before.

  5. To finish, add the shredded coconut and mix well.

  6. Serve over rice or plain and enjoy!
